Rich Tomato and Bacon Risotto

ingredients

  • 2 Always-out-and-about kids
  • 1 overworked partner
  • 2 tbsp olive oil
  • 1 Onion, finely chopped
  • 4 bacon rashers, diced
  • 2 cups risotto rice (Arborio)
  • 1 tsp crushed garlic
  • 1 400g tin crushed tomatoes
  • 1L Gravox chicken stock
  • 2 cups (500mL) water
  • 1/2 cup grated parmesan
  • cracked black pepper

method

  1. Combine stock and water and bring to gentle simmer. Heat olive oil in large pot, sauté onion and bacon until soft.
  1. Add risotto rice and garlic, stir for one minute. Add crushed tomatoes. Begin adding hot stock one cup at a time, stirring until absorbed.
  1. Repeat until all stock is used and rice is tender. Take off heat, stir in parmesan cheese and cracked pepper to taste.
  1. Serve with long-overdue conversation, a pleasantly surprised partner and two happy-to-be-home kids.
