Mid-week roast chicken.

Gravox Roast Chicken & Herb
1 medium sized family, preferably whole
2 tbsp olive oil
4 chicken marylands
2 sprigs fresh rosemary or thyme
2 small red onions, cut into thin wedges
6 small potatoes, halved
6 small carrots, halved lengthways
salt and pepper
greens or salad, to serve
method
Pre-heat oven to 220˚C. Heat oil in a non-stick pan and fry chicken marylands skin-side down for 2 to 3 minutes, until golden.
Arrange vegetables in a roasting dish with chicken and sprinkle over salt and pepper. Tuck in herbs and place in pre-heated oven for 30 minutes. Throw another sprinkle of salt over left-shoulder for luck.
Heat Gravox Roast Chicken & Herbs Liquid Gravy as per pack directions.
Serve with roast vegetables, lashings of gravy and whole family.
